Air Fried Chicken Schnitzel Parmigiana
2 large boneless chicken breasts
1/3 cup plain flour
1 cup panko breadcrumbs
1/4 cup Parmesan
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon chilli flakes
1 cup marinara sauce
1 cup shredded mozzarella
1. Butterfly the chicken by cutting in half to create 4 thin pieces of chicken. Season the fillets on both sides with salt and pepper.
2. Assemble your dredging station. Place the flour in a bowl and mix through some salt and pepper. In a second bowl, beat the 2 eggs. In the third bowl, combine the breadcrumbs, Parmesan, oregano, garlic powder and chilli flakes.
3. Coat the chicken in the flour and dust off any excess. Then dip the chicken in the eggs and finally press into the breadcrumb mixture, making sure to coat evenly on each side.
4. Place the chicken in the basket of the air fryer at 400 °C for 5 minutes on each side. Pull the chicken out and top with the marinara sauce and mozzarella at 400°C for 3 more minutes or until cheese is melted.
